As a challenge for myself, I spend most of the last two days creating recipes for the Chocolate Adventure Contest. The basic rules stated that I must combine Scharffen Berger chocolate (milk chocolate, dark chocolate, or cocoa powder) with one or more of the following "adventure ingredients"...
- Basil (Thai, Japanese, or garden Basil)
- Mustard seeds
- Coriander
- Black sesame seeds
- Black or pink peppercorns
- Chili pepper (fresh or whole dried)
- Coconut milk
- Kaffir lime leaf
- Matcha tea
- Mango
- Plantain
- Jicama
- Tapioca pearls (any size)
- Tamarind (or tamarind paste)
- Cacao nibs
- Popping candy (unflavored or flavored)
- Wattleseed
- Palm sugar
Other than the pure joy of creating recipes, Scharffen Berger was offering three $5000 prizes, one for each category:
- Sweet
- Savory
- Beverage.
Due to the rules in fine print, I can't "publish" the recipes can't have already been published, so if you want one email or message me directly.
I was able to submit a maximum of 10 recipes, but only thought that 9 of the over 50 I conceived were "adventurous" enough to enter.
Here are my entries....
Sweet
Savory
Beverage
Wattleseed Mocha (no photo, sorry)
Kaffir Cocoa (no photo, sorry)
Here's some recent culinary creations...
Come over quick ...or make your own Jalapeno Habanero Cranberry Brownies.
Ripe bananas? ...make banana bread. Naa, too much effort just to save
a few bananas.
A quicker solution: Smoothies!
Just peel and break up the bananas into a container and toss in the
freezer. Next morning, pop a few in the blender with any of the
following:
- frozen berries
- fresh fruit
- yogurt (I buy the big bucket of vanilla
- juice
- etc.
Pro Tip: Be sure to have enough liquid in the blender to keep things
fluid.
Today's Smoothie:
- Bananas & Vanilla Yogurt
Tonight's contribution to cooking-at-brads. Orange and Beet salad cribed from Elise's Simply Recipes. Photo doesn't look so good, but this was a very simple and tasty dish. I highly recommend this recipe as a compliment to any rich or gourmet foods... tonight it complimented a surf and turf combo of flank steak and grilled scallops with a burre blanc sauce.
Sweet Potato Pie in Six Apart kitchen!
Here's the recipe I used for inspiration: http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_24965,00.htm
How I changed it:
- more pecans
- 3 whole eggs instead of 5 egg yolks
- hand mash instead of using a machine to blend
- wholewheat crust
- extra maple syrup
That's it!
