Quiche
An Alton Brown episode of Good Eats inspired me to whip up some caramelized onion quiches from various ingredients needing to be used before flying to Mexico in about 24 hours. Should I bring one to work? Recipe below...
Recipe
- Very thinly slice 5 red onions and 1 white onion.
- Caramelize them in a large skillet until reduced to 1/3 original size and super brown
- In blender, puree 4 eggs, 1 block of soft tofu, 4 tablespoons of various herbs (I used oregano and marjoram), and some fresh-ground pepper.
- Bake 2 pie crusts in oven for 15 min. You may need to poke fork holes in the crust to keep it from bubbling up as it bakes. Take a peek every 5 min.
- Combine onions and egg/tofu mixture in bowl, with 1.5 cups grated parmesan (or other had cheese) then pour into pie shells
- Bake for 35-45 min at 400°F
- Eat hot or allow to cool.
